This vegetarian model of tortilla soup is no significantly less complicated than its chicken counterpart, thanks to a lot of veggies, spices and a secret ingredient: canned chipotles in adobo. Smoked and dried jalapeos softened in a vinegar-tomato mixture, these small powerhouses do a lot of the hefty lifting in this vegetarian soup, providing depth and a certain meatiness to an otherwise light and tangy broth.
