Two Lost Bentos (417 & 418)

I’ve been debating whether I should post these two bentos for some time now.  This morning, I decided I really should just for consistency’s sake.  Both of these bentos were packed not long after returning from vacation and conference.  I was tired in the days afterwards.  Maybe even a bit lazy with the camera.  Okay, alot lazy with the camera because these pictures are not sterling examples of my photographic hobby.  Ah well, that doesn’t mean they should be unloved.

Though this first bento wasn’t my favorite.  We all have our cooking mishaps, and you know that I am no stranger to cooking boo boos on a fairly regular basis.  This is one of those times.  That’s a pasta salad with cucumber and edamame.  A bit of buttermilk dressing is in the bottle.  It was my attempt at creating a pasta salad that I’m going to enjoy (something that after 5 years, I still haven’t accomplished).  Raw carrots, strawberries, and grapes accompanied me that day.  I ate all my fruit and carrots, but most of the pasta salad, sadly, saw the garbage can.  I just didn’t care for it.  Anyone out there have a really great pasta salad recipe they would like to share, preferably with a vinaigrette?

This next bento was better.  It was my first attempt at making my go-to pasta dish after returning home.  A little too heavy on the bacon though.  I’m finding for some reason I’m looking my liking of bacon.  Sacrilege, I’m sure. So don’t tell anyone, okay?  Let’s just keep that between you and me.  The green beans were AWESOME though.  My regular garlic basil green beans with some of my spicy almond topper mixed in with them.

This bento was accompanied by good fruit and veggies, and my typical hard boiled egg.  I was extremely full after this bento, eating just a wee bit of yogurt for dinner.  So good.  Such fond memories.  Just wish the pictures were better.
