I am often governed by what is in the fridge waiting to be cooked. Do you remember this recipe from a year ago? Turkey meatballs. I was surprised how tasty they were then, and they’ve often come to mind again since last May. I just never got around to making them a second time. This past Saturday, I purchased ALOT of lean ground turkey…probably more than any single girl really needs in her freezer (all thanks to my recent Sam’s Club trip). And the whole reason was so I could make these again. I froze most of the meat, leaving out a portion to make meatballs. I think though I may need to find another tasty recipe as that’s a whole lotta turkey waiting to be made into meatballs.
Last night, I made the meatballs and put them on to broil. An eggroll went into the toaster oven to crisp up and I began to look for sides. I knew carrots and french dressing would appear on the plate as I am on a raw carrot kick again. And a nectarine is a must as I purchased a large case of those too. I love nectarines; however, these just won’t come away from the pit. I end up mangling the flesh. So last night, I just cut the flesh away from the pit rather than the twist and pull. Much cleaner.
And as I waited for the meatballs to cook, I decided to pull out the grill pan and sear those nectarines a bit. I’m not sure it really did much for their flavor, but it didn’t hurt it either. They just needed something a bit…more…to compliment them.
Other than the monochromatic tone of last night’s meal, it was near perfect. A simple, no thought cheesy TV episode, a small glass of milk, and I was one content girl. Which means I had fabulous leftovers for a bento today.
Bottom tier: Two turkey meatballs, one egg roll, brussel sprouts, and boiled corn. YUM! Top tier: Raw carrots and grilled nectarine halves. <sigh> Have I mentioned how much better I feel now that I am packing bentos again regularly? Life is fabu as usual. :)

ROTFL! I snorted out loud at that comment. That picture with the picks is a year old. And I only seem to use them when I take pictures…seldom in my bento. I do so admire those really cute bentos.
