Every once in awhile I come up with a really fabulous idea for myself. There is a restaurant in Baton Rouge that has a sandwich with pineapple and avocado on it that I adore. At the house a few weekends ago, I was staring at a package of turkey ground meat wondering what to do. ”Turkey meatballs,” I thought to myself. And my stomach said, “NOOOO! I’m tired of those.” Since I was determined not to leave the house due to the tropical depression blowing through my state at the time, I searched my pantry for other ideas. I found an avocado that needed to be used and a can of pineapple. Hmmmm, there were possibilities there. Having baked bread the day before, I knew I could have one spectacular sandwich.
Pulling out the recipe for the Versatile Meat Mix, I used that as my guide to help me figure out how to fix this burgers. A bit of bread crumbs, seasonings, Cajun spice mix by Tony Chachere’s (Have you entered the giveaway yet. It ends today!) Oh my word. This sandwich was amazing spectacular. Baked yam “fries” were my side, and I craved this burger all weekend long. In fact, I think that I am still craving it and this weekend I will need to make more.
