
There is a fast food type restaurant in my area called Izzo’s Illegal Burrito. Do you have one of these in your area? I am slightly addicted to their steak tacos, mainly because I like how they do their taco shell. Four corn tortillas are grilled on a flatop. Once grilled, they place cheese on two of the tortillas, then stick the final two tortillas on top. The cheese holds the tortillas together, and the double layer of tortilla shell helps hold together all your fillings.
I tried making my own tacos this way last night. In a pan with a bit of olive oil, I caramelized some chopped onions, pan-roasted a bit of garlic, and heated through some roasted chicken I had defrosted. I generous pinch, or two, of apple chipotle seasoning was sprinkled over everything for more flavor and a bit of a kick. These tacos were slammin’ good last night. I am so ready to enjoy them again for lunch today. With them I have packed lettuce and a small container of lime juice.

I also have raw carrots, blueberries, a hard-boiled egg, and 3 lemon cream cookies. As the day progresses, I’ll probably eat the carrots or blueberries for a snack. I can’t tell you how easy this week as been with just re-purposing some roasted chicken into another dish. This dish took about 20 minutes to prep, a great thing after a long day of work.

Thanks Sheri! I must admit that it did make a world of difference when trying to eat these for dinner last night. Things seemed to hold up much better.
Quick dinner at my house – especially in summer when I really don’t want to heat up the kitchen – is always couscous. Simply pour some instant vegetable broth over couscous, hold it warm, stir in a little butter after 3 minutes and hold warm until needed but minimum 5 further minutes. It’s just nothing in work. Use as rice or so. Also: You can mix-in cooked, diced or shredded vegetables for vegetable couscous and maybe nuts; or a lot of shredded parsley with a little cucumber and a little tomatoe pieces and vinaigrette for a great summer salad; or just pop it up with harissa (that hot Morrocan spice). I really like that stuff.
Duuuude! Those tacos sound crazy good! Wouldn’t it be fun to try the same concept with a pita & Greek fillings? Or you could stick with the flour tortilla and try some Thai fillings– peanut sauce, shredded cabbage, satay chicken and what not.
