Pasta with Peas and Chicken (407)

Last night upon returning home from vacation and picking up the dogs, I realized just how bare my pantry is at the moment.  I dreaded the thought of having to get back out and go to the grocery store.  Rest.  I needed a wee bit of rest and food.  Looking around my kitchen, I realized I  had the following ingredients: egg noodles, frozen peas, frozen roasted chicken meat, parmesan cheese, and sliced almonds.  I quickly realized I could use my go to pasta recipe to make a quick and simple dinner.  I also realized what a smart idea it is for me to continue to roast chickens and keep the shredded meat in the freezer.  Tonight, I think I might have chicken tacos.  Between tacos and this pasta, I can feed myself for the next few days until it is time to leave for conference.  Woot woot!  Maybe I can even avoid doing too much grocery shopping until I come back from conference.  Which would be a great thing!  Then I can focus back on home and hearth at that time.
