Hello everyone! Welcome to my jambalaya bento today! I am so so super excited about it. My co-workers have been raving about a new butchery that opened on my way home from work. I see it every day, but never stop. At the end of the work week, I visited the joint to see what they had for this week’s bento. Housemade mild smoked sausage and pork cut for jambalaya came home with me.
Following my mom’s tried and true jambalaya recipe, I made what I’m calling “overloaded jambalaya,” as had chicken defrosting in the fridge as well. That’s right, there’s chicken, pork, and sausage in that jambalaya. It all came together in a dish of spectacularness that I was so excited about I nearly did a dance in the kitchen. Woot woot!
Today’s jambalaya dish is accompanied by roasted broccoli and carrots, plum, grapes, lettuce for a simple salad, and mini blueberry muffins.
