This past week at work was crazy. Lots of meetings that meant eating out with coworkers and such. I only packed 2 bentos for myself. Both bentos contained what I think of as some of my “go to” bento meals. These are quick & easy to prepare meals that I make when I’m short on time.
Bento #52 includes one of my favorite new go to meals: roasted sweet potato and sausage modified from a recipe that I discovered over at Recipezaar. This bento contains:
- Roasted sweet potato & sausage
- Homemade honey wheat bread
- Cherries, grapes, and carrots (with dipping sauce in container)
- Almond Crush Pocky (my favorite!)
My second to-go bento of the week included lime-basil chicken. This is simply chicken thighs baked in an oven. While baking, I baste the chicken with a lime-basil salad dressing that is way tasty! I then shredded the chicken afterward’s like Feisty Foodie’s kickin’ chicken. Now, I must admit that I had started out baking this chicken to make the Foodie’s chicken. Then, I discovered I was out of BBQ sauce in his house. I don’t know HOW that happened! I’m normally never without the stuff.
Bento #53 contains:
- Shredded Lime-Basil Chicken
- Steamed green beans and carrots
- Cherries, grapes, orange slices
- Almond Crush Pocky

Oh I am so jealous of your beautiful new site! I always wanted one… ah well, it will wait. (I am too inept to make one… banner, and all this other stuff that makes no sense to me. Ah well!) And yes, the beauty of the baking chicken then shred method is you can use whatever flavor you want, so you can essentially make chicken the same way how many weeks in a row but never be eating the same thing! Or if you’re especially lazy… you can even partition the chicken in a baking pan and – gasp dare I say it – cook it in a bento-style looking baking pan ! but with 3 different sauces/flavors going on. Or MORE! Oooh…. did I just blow someone’s mind with the meta meta reference? Hehe, just feeling silly. LOVE the new site!!! Congrats!
Almond Crush Pocky is my favorite too! I use to really like the marble ones, but I think they’ve been discontinued.. =(
