It’s Monday again, and I don’t think I have ever been so excited to see Monday roll around again. Why? Because this weekend, I caught a little bug. Only 48 hours, just enough to ruin part of the weekend. As I subsisted on saltines and Sprite for a portion of that time, I was ready for a bit of food that was a more substantial by Sunday afternoon. I really wished for the chicken & rice soup I purchase from a local restaurant, but didn’t want the bother of going there. What to do? What to do? A quick flip through one of my favorite Cooking Light cookbooks found a recipe that I modified into this: Chicken & Lentils with Rice.
The recipe for this dish will come next week. In the meantime, let’s admire it in today’s bento. Hmmmm, lovely. It was hearty enough to make me happy, light enough to keep my stomach from having a relapse, and tasted wonderful. It’s paired with steamed edamama, a hard boiled egg, blueberries, and a few animal crackers.
