Monday night, I wanted to enjoy my cous cous dish again, but didn’t want to eat more black bean burgers for dinner. I had them at lunch. While great and tasty, a whole week of black bean burgers and Spanish style cous cous seemed daunting. I decided to make spinach quesadillas for dinner. I only ate half a quesadilla for dinner, so the rest I brought to work with me.
As well, I discovered that Wal-Mart is carrying these snack packs of guacamole dip by Wholly Guacamole brand. I wasn’t so much intrigued by the 100 calorie notion as by the notion they fit with my bento box so darn well! I just popped this thing ontop of everything before I closed the box and voila! Ready for lunch.
This bento contains: 1/2 a spinach quesadilla, black bean burgers, hard boiled egg, and spanish spiced cous cous.

I must admit it was! I really enjoyed this bento box.
I’m so full yet looking at this makes me want to eat all over again. I wonder if I can find Wholly Guacamole in NYC.
Good question. I know Whole Foods carries that brand, but don’t know if they necessarily carry the little packs.
I’ve gotta say, I ate every bit of that guacamole. It worked out perfectly with the quesadilla. YUMMERS!
