Woohoo! My week is complete, and I’ve brought a bento to work each day…that I did work. It’s only 3 days so far, but so glad to be back into a routine again. Whew. Anyhow…
Today’s bento is very similar to yesterday’s in content. The only real difference is changing out steamed green beans for steamd carrots. I wasn’t so happy with how I packed everything into yesterday’s bento. This was only because I couldn’t figure out at first how to layout the mini meatloaf with the lentil burgers. Today, I figured it out, making it all a bit more visually appealing to my eye. I also snuck in a third vegetarian wonton beloww the crabmeat au gratin. Hehehehehehe, I love those things. I plan on having a wonton making marathon this weekend.
Today’s bento includes:
Crabmeat au gratin (in green silicone cup)
Vegetarian Wontons (recipe here)
Mini Meatloaf (recipe here, I left out the peppers & cheese this time and added in 1/2 cup ketchup)
Lentil cake (recipe/process here)
Steamed Carrots

Looks great Jenn. You’ve done well packing a bento for your lunch every day. Now that you’re working closer to home it’s nice to come home and have it already ready and waiting to enjoy.

No, you didn’t miss the crabmeat au gratin recipe. My brother made this, froze it, and gave me lots of it as part of my Christmas present. However, I must say I am going to ask him for the recipe so I can feature it here on NEB.
Mmmmmm…. that looks great. I managed 2 bentos this week but worked 5 days… but I am still kind of proud of myself! lol!

I love the look of the lentil cake – I regularly have meatloaf in my bento as well, but yours look more complete than mine!
It’s a trick of the light! LOL! I love meatloaf in my bento. They are so quick and easy to defrost, at least when I make mini ones like this.
