Apple and Brie Breakfast Sandwich Bento

The sandwich in today’s bento box is the current apple of my eye (pun intended). It all started when my brother contacted me one weekend last month, “Have you eaten breakfast? You should eat breakfast. Breakfast is good for you.” Which is Jason speak for, “I want breakfast. Do you want to have breakfast with me today?” Now, breakfast was actually around 9:30 a.m. that day, so really we had more of a brunch.

My brother and I have dinner together every Tuesday night, and each week it’s a small chore to decide where to go. But that morning, I pretty much knew as soon as he asked: Another Broken Egg Cafe. It’s a restaurant in Baton Rouge I’ve wanted to try for quite some time, only open between 7:00 a.m and 2:00 p.m. It was a fabulous meal, one I’m still trying to recreate at home.

And one that caused the creation of this sandwich, based on a starter they have there of baked brie, apples, raisins, and pecans. This sandwich is layers of brie, toasted almond slices, apples, and sharp cheddar. It’s grilled in a pan on the stove like you would make a grilled cheese sandwich. And the whole thing just makes me salivate as never before.

Today’s apple and brie breakfast sandwich bento is packed with two medium hard-boiled eggs (I’m having egg boiling trouble again), raw carrots, cucumber, and a clementine.

This is going to be a fabulous lunch. Is it noon yet?

    Simple egg boiling method : put 2-3 eggs in pot of cold water and bring to a hard boil. Remove pot from heat, cover with a lid and let stand for a full 15 minutes. Run eggs under cool water and peel. Presto hard boiled eggs. This method always works for me and the eggs peel well 98% of the time. Hope that helps. Like the looks of your sandwich and YEAH no raisins LOL. I will try it.

    9:30 is still breakfast time here in my world… 10:30 is brunch… of course, dinner sometimes (at restaurants) is 8 or so… though I prefer 6:30 hahaha
