Almond Stuffed Chicken (394)

Ahhh, a bento. After three months of virtually no cooking and eating out way too much as I dealt with life, I’m so happy to have a lunch to bring to work with me. There was a bento or two here and there within that time, but honestly, they weren’t anything about which to share.  Sandwiches.  Boring ol’ sandwiches.

But today’s bento is anything but completely boring.  The bottom tier contains crabmeat au gratin (thank you to the brother for giving me homemade meals for christmas!), green beans, and almond stuffed chicken with sweet potatoes underneath.  The top tier has a bit of romaine salad, a hard boiled egg, and some salad dressing.

The almond stuffed chicken was pretty darn good and is a Cooking Light recipe I tried.  We will go over it next week on New-to-Me Tuesday.  The salad dressing is this no calorie, no fat stuff I picked up at the grocery store.  I’ll be reviewing that on a coming Tuesday as well.
