Photo Friday: Bad Muffins

Looks and smells can definitely be deceiving at times. While I’ve quite enjoyed exploring Bittman’s vegetarian cooking tome, I do run across a recipe that just doesn’t work for me well.
These muffins are a great example. The first time I tried them they were only okay.
This time was horrible. The biggest problem with Bittman’s book is the amount of options he gives to adjust or modify a recipe. This is one such instance. This time I made these muffins using a bit of cornmeal, a bit of flour, a bit of whole wheat flour. I also threw in a bit of grated Scharffen Berger chocolate. I had hoped to make a delectable blueberry chocolate muffin. It looked good. It smelled good. It tasted like blech.
What was I thinking?! Waste of blueberries and chocolate! The cornmeal was a big culprit in this. Cornmeal just doesn’t make a good muffin for me. At least not in this instance.
I still haven’t found a blueberry muffin recipe that really knocks my socks off. Back to the ol’ drawing board as it were.

Very bad.
Blueberries – they are such divas! They don’t generally play nice with chocolate. Corn meal is nice for adding texture or highlighting savory flavors, but I can’t imagine it pairs well with the chocolate, either.
I guess this means you need to send me your chocolate. For the sake of your muffin experimentations, of course! No? Well then, cook & bake on!
