
Yesterday’s lime-basil chicken dish became today’s bento with a few changes.
Top tier: lime basil chicken (meat stripped from bone), peppers with quinoa
Bottom tier: carrots, pistachios, and dessert (chocolate covered cherry and maltball)
I decided after finishing yesterday’s lunch that I didn’t really care for the broccoli-cheese-quinoa mixture. It was something with the cheese. I’m not sure. That night, I made pork chops and used a pepper stir-fry mix with some quinoa. DELISH! This came out way better than I was expecting it to be. Leftovers from that made its way into this bento with the chicken. Happy surprise!
